Required products :

  • 350 milliliters of fresh milk
  • 6 whole eggs + 1 egg white
  • 130 grams of sugar
  • 30 grams of corn flour
  • 1 teaspoon vanilla
  • 175 grams of pecans
  • 150 grams of oatmeal
  • 1 tablespoon cinnamon
  • 70 grams of butter
  • 2-3 red apples, cut into thin crescents
  • the juice of 1 lemon
  • 2 tablespoons honey
  • 1 tablespoon powdered sugar for sprinkling

Method of preparation :

Heat the oil until it starts to form bubbles at the edges (for about 3-5 minutes).

Mix the egg yolks with 100 grams of sugar and corn flour. Carefully pour in the hot milk, stirring constantly. Transfer the mixture to another saucepan and place on a low heat to prepare the sauce (if you use a hot milk saucepan, you run the risk of cutting the eggs). Cook for 3-5 minutes, stirring constantly, until the sauce thickens.

Remove from the heat, pour the vanilla and transfer to a bowl, cover with paper and leave for 1 hour to cool.

Preheat oven to 160 degrees.

Grind pecans with oatmeal. Add cinnamon and the remaining sugar, butter and egg whites. Stir well to combine.

Pour the mixture into a round 23 cm tray with a falling bottom, forming a tray on the bottom and the walls in the shape of the tray. Bake for 15 minutes, then cool.

Pour the yolk cream over the cooled pan and flatten.

Thinly slice the apple and place in a fireproof bowl. Drizzle them with lemon juice to prevent them from darkening. Fill the bowl with water and heat in the microwave for 4 minutes to soften the apples. Drain.

Turn on the oven to preheat to 160 degrees.

Roll up a few slices of apple like roses and arrange them in the cream.

Bake for 15-20 minutes to give the dessert an appetizing color. Cool briefly and pour honey on the apples, then sprinkle with powdered sugar. You can serve the tenth both slightly warm and cold.

It can be stored for up to 3 days in the freezer.
