How To Cook Corn Soup With Garlic, Shrimp And Avocado - Recipe

Corn soup with shrimp and avocado is delicious, slightly sweet and pleasantly cold, with a hint of garlic and coconut.

Required products :

  • 2 cups corn + more for garnish
  • 1 small onion, chopped
  • 4 cloves garlic, pressed
  • 2 tablespoons coconut oil
  • 1/2 cup coconut milk
  • 1 and 1/5 cup water (or vegetable broth)

for garnish:

  • 230 grams of shrimp without tail
  • 2 tablespoons butter
  • 3-4 cloves garlic, pressed
  • 1 teaspoon hot red pepper
  • 1 avocado (optional)
  • sea ​​salt to taste

* A tea cup is used to measure the quantities.

Method of preparation :

Heat the coconut oil over medium heat and sauté the onions for a few minutes, then add the garlic, corn and water (or vegetable broth). Season with salt and cook for 10 minutes, stirring often. Pour the coconut milk and cook for 1-2 minutes, stirring. Remove from the heat. Once slightly cooled, blend until smooth and refrigerate.

Before serving, melt the butter in a pan, fry the crushed garlic and hot red pepper. Pour the shrimp and saute, turning once. Cook until translucent and well cooked.

Serve the soup in bowls, garnish with garlic shrimp, chopped avocado, corn and crushed garlic. Season with sea salt.
