Method of preparation :
Cover the bottom of a large tray with kitchen paper. Arrange the tomatoes on it and put a second leaf. Leave to stand for 1 hour.
In a bowl, mix the white and corn flour together with the salt. Add the butter and cut it into small cubes with a knife. Pour olive oil and mix lightly with a fork. Gradually pour 1 tablespoon of cold water into the flour mixture and stir with a fork until it begins to acquire the consistency of dough, which you form into a ball.
Preheat oven to 200 degrees. Cover the bottom of the baking tray with parchment paper. Spread the dough in the pan. Spread the tart with fresh milk and bake for 10-15 minutes or until light brown, then remove from the oven.
Move the oven rack to the top row and heat to a high temperature. In a small bowl, mix 1/2 cup cheddar cheese, white pasta sauce, thyme, garlic, salt and pepper. Pour the combination over the tart. Garnish with pieces of chicken (optional), sliced tomatoes and sprinkle with the remaining 1/4 cup cheddar. Bake for 3-5 minutes or until the cheese begins to brown slightly. Remove from the oven and serve the tart warm.
