How To Cook Cornbread Cakes Stuffed With Artichokes And Chicken - Recipe

Required products :

  • 1 1/2 tea cups shredded cooked chicken
  • 220 grams of cream cheese at room temperature
  • 1 can of 400 grams of artichokes
  • 1 packet (about 250 grams) frozen spinach (thawed and drained)
  • 1 teaspoon hot pepper
  • salt and pepper
  • 18 small corn tortilla cakes
  • 2 1/2 tea cups grated cheese (Montreux jack)
  • olive oil for spreading

Method of preparation :

Preheat oven to 220 degrees and grease a large pan with grease of your choice.

In a large bowl, mix the chicken, cream cheese, artichoke, spinach and season with salt, pepper and cayenne pepper.

Place the tortilla cakes on a plate, cover with a towel and heat for 30 seconds in the microwave to soften.

Put a little of the stuffing in each, sprinkle with cheese and roll. Arrange in the tray.

Brush with olive oil and bake for about 15-20 minutes, turning them halfway through baking.

Serve with a dip of your choice - salsa or milk.
