Pupusas are flat and stuffed loaves. In 2005, they were officially declared a national dish of El Salvador. They are made from corn or rice flour, similar to the Venezuelan and Colombian arepa. They are filled with one or more ingredients, such as cheese, pumpkin, beans, fried or roasted pork Chicharon or other.
They are usually served with cabbage salad with carrots and red onions (Curtido) and tomato sauce with radishes (Chimol). They are traditionally eaten by hand and do not use dishes. The exact origin of the cakes has not been proven. This recipe was prepared by the Spaniards who once settled in El Salvador.

Method of preparation :
Mix the corn flour with the lukewarm water and knead the dough.
Divide it into 6 or 8 small balls.
Fry the meat, onion, garlic, pepper, tomato and spices in hot fat until cooked. Once cooled, strain until smooth.
Roll out each ball of dough carefully with your hands and fill with grated yellow cheese, mozzarella and a spoonful of mashed meat.
Close and shape into a loaf. Fry in hot fat for about 3-4 minutes on the side and transfer to kitchen paper to drain off excess fat.
Serve the cakes with cabbage salad with carrots and red onions (Curtido) or with tomato sauce with radishes (Chimol), which are also traditionally prepared in El Salvador.
You can eat Pupusas cakes both hot and cold.
