Necessary products

  • 1 1/4 tea cup corn flour
  • 3/4 tea cup sifted wheat flour

  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/3 tea cup of fresh milk
  • 1 teaspoon kefir
  • 2 large lightly beaten eggs
  • 120 grams of melted butter (1 tablespoon of it is for spreading)

 

For the jam:

  • 500 grams of strawberries, cut into pieces of about 0.5 cm
  • peel of 1/3 lemon
  • juice of 1 lemon
  • juice of 1/2 orange
  • 1/2 teaspoon sugar
  • 1 tablespoon butter
  • pinch of salt

 

Method of preparation :

The dough. Mix the two types of flour, add salt, sugar, baking soda and baking powder. Pour the milk, kefir, beaten eggs and butter. Mix everything until smooth.

Preheat a cast iron skillet 25 cm in diameter in the oven to 220 degrees. Then remove the dish and smear the bottom and walls with 1 tablespoon of oil. Pour the dough and bake in the oven until golden (about 20 - 25 minutes). Check readiness with a toothpick. Wait for the finished bread to cool for 10-15 minutes and sprinkle with a little sugar. Cut into pieces.

 

The sweet. Pour the sliced ​​strawberries in a suitable bowl, add the peel and juice of lemon, salt, sugar and orange juice. Melt the butter in a separate bowl and add the strawberries. Leave on the stove for about 10 minutes, stirring until the juice evaporates.

Serve the cornbread with the prepared strawberry jam.
