How To Cook Cornbread With Tomatoes And Cheese - Recipe

Necessary products

For the dough:
150 grams of wheat flour
300 grams of corn flour
200 milliliters of water
10 grams of dry yeast
1 teaspoon of salt
1 tablespoon of sugar
1 1/2 tablespoons of olive oil
200 grams of yellow cheese

For the filling:
3 tomatoes
1/2 bunch parsley or other green spice of your choice

Preparation :
Sift the corn flour into a deep bowl. Then sift the wheat along with the salt, sugar and yeast. Mix the two types of flour and mix well. Pour olive oil (maybe other vegetable fat or melted butter), hot water (but not boiling), stirring constantly. Knead the dough, which should not stick to your hands. If necessary, add a little flour.
Cover the dough and leave it for an hour. It is good if it rises twice.
Grate the cheese.
Knead the finished dough, divide it into 3-4 equal parts and roll each of them, forming rectangles 5 millimeters thick. Spread the yellow cheese on their surface, you can spread with olive oil, if you prefer, but not necessarily.
Close the dough like an envelope, roll out once more, giving a round shape with a diameter of about 20-25 centimeters. Lift and fold the edges and let stand for 15 minutes.
Wash the tomatoes and cut them into pieces. Put them in the middle of the loaves, sprinkle with chopped parsley.
Bake in a preheated 190 degree oven in a pan whose bottom you have covered with parchment. The exact time depends on your oven (about 20 minutes).
