How To Cook Cottage Cheese Pate With Tomatoes And Onions - Recipe

Required products :

  • 250 grams of high-fat cottage cheese (approximately 25%)
  • about 15 small tomatoes
  • 1 onion
  • 1 bunch of basil
  • 2 coriander stalks
  • 2 sprigs of parsley
  • 4 tablespoons oil
  • salt and pepper to taste

 

Method of preparation :

Take a deep bowl, put a colander or a suitable sieve in it, cover with 3 layers of gauze, pour the curd and wrap with the ends of the gauze. Refrigerate overnight. Excess fluid will drain during this time.

The next day, drain, forming a "bag" of gauze and tightening the curd in it. Then pour it into a bowl.

Cut the tomatoes in two (or several pieces depending on their size). Cut onions into circles or semicircles (optional).

Heat the oil in a pan and carefully place the tomatoes with the slices facing down. Let them prepare until the liquid has completely evaporated, turning them periodically on one side and on the other with a fork.

Tomatoes should be soft, but not float in their own juice. Take them out on a plate and stew onions in their juice until ready. It should acquire a light golden crust. Allow it to cool to room temperature.

Cut the green spices and mix them with the fried vegetables. Grind the combination using a blender on medium speed for 1-2 minutes. A fragrant red porridge is obtained, which you transfer to a plate.

Put the curd in a blender and beat for 2 - 4 minutes, then add to the vegetable mixture. Stir, season with salt and pepper and refrigerate because the pate is served chilled.

Aromatic and appetizing addition to rusks, crackers, salty cookies, a slice of black or white bread, sandwiches, also goes perfectly with main dishes, fish, stewed meat with vegetables, cooked cereals and pasta.
