Required products :

  • 2 tablespoons olive oil
  • 1 onion, finely chopped
  • 1/4 teaspoon hot pepper flakes
  • 3 1/2 cloves garlic - 3 finely chopped, 1/2 grated
  • 500 grams of minced turkey
  • 20 grams of mint leaves
  • 1 lemon - peel and juice
  • 200 grams of yogurt

for the salad:

  • 200 grams of Arabic couscous + 1 tbsp
  • 1/2 cube chicken or vegetable broth dissolved in 250 milliliters of water
  • 200 grams of frozen peas
  • 50 grams of finely chopped spinach
  • 250 grams of radishes, thinly sliced

Method of preparation :

Heat 1 tablespoon olive oil in a pan and fry the onions for 10 minutes.

Add the hot pepper, garlic and after a minute transfer to a plate. Cool for 5 minutes. Add to the onion minced meat, 1/3 of mint, half a lemon peel and 1 tablespoon of couscous. Season and make 16 balls. Cool them for 30 minutes in the refrigerator or for 15 minutes in the freezer.

Meanwhile, add the remaining lemon zest to the couscous, pour over the hot broth and leave for 15 minutes to absorb.

Blanch the peas for 2 minutes in hot water, drain and transfer to cold water to prevent discoloration. Set aside.

Mix the yoghurt, the grated garlic, half of the remaining mint and half of the lemon juice in a bowl.

Mix the couscous with a fork, season with the remaining couscous, add the spinach, peas, zucchini and mint.

Fry the meatballs in 1 tablespoon of olive oil until cooked through - about 10 minutes, until browned. Cover and cook for 5 minutes under a lid.

Serve the couscous with meatballs and milk sauce.
