Required products :
1 eggplant
1 zucchini
1 cup couscous
2 onions
1 large tomato
75 grams chickpeas
75 grams beans
75 grams lentils
75 grams peas
50 grams canned corn
1/2 lemon
1 bunch parsley
3 cloves garlic
5 tablespoons olive oil
1 teaspoon butter
1 teaspoon spoon of red pepper flakes
1 teaspoon of sea salt
Preparation :
Boil the legumes separately until cooked , then mix and place together on the stove for 5-7 minutes.
Peel onions and garlic and cut into large pieces. Eggplant, zucchini and tomatoes cut into pieces.
In a deep pan, heat 1 tablespoon of olive oil and fry the onion and garlic in it, then add the vegetables. A few minutes later, add the legumes to the other products, stir, close the pan with a lid and let the dish simmer for an hour.
At the end of cooking, season with salt and pour the corn. Remove from the heat. Finely chop the parsley, squeeze the juice of 1/2 lemon.
Pour a glass of salted boiling water over the couscous and add the butter. When the beans absorb all the liquid, season with 3-4 tablespoons of olive oil, lemon juice and red pepper and parsley (you can use another green spice).
Serve the couscous with the resulting fragrant vegetable-bean mixture.
