Required products :

  • 1 1/2 teaspoon couscous
  • 2 tablespoons olive oil
  • 500 grams of mixed mushrooms
  • 1 pinch of salt and pepper
  • 1 tablespoon butter
  • 1 teaspoon Italian spice mix
  • 1 teaspoon balsamic vinegar
  • 2/3 cup ricotta tea
  • 2 teaspoons chicory, chopped
  • for dressing:
  • 2 tablespoons finely chopped onion
  • 2 tablespoons balsamic vinegar
  • 1/4 teaspoon Italian spices
  • 1 pinch of salt and pepper
  • 5 tablespoons olive oil

Method of preparation :

Prepare the dressing - combine onion with balsamic vinegar, Italian spice, add a pinch of salt and pepper. Put them in a jar and leave for 5-10 minutes to marinate onions. Finally, add olive oil and shake vigorously to mix all products.

In a saucepan with salt water, boil the couscous until done. Drain and place in a large pan. Season with 2 tablespoons of the dressing, then stir with a fork.

Put 1 tablespoon of olive oil in a pan and fry the mushrooms (put a little of them, the purpose is to fry them, not to boil them in the water they put in) until they turn brown. Season with salt and pepper. Put all the fried mushrooms in the pan and add the butter, Italian spice and balsamic vinegar. Stir and cook for a minute, then try and season to taste if you feel a lack of salt or pepper.

Season the ricotta with salt and pepper and blend to make it smooth. Add to it 1 tablespoon of olive oil (if necessary add a little more) to obtain a smooth cream.

It's time to assemble the dish.

Put the ricotta on the bottom of a plate.

Pour the chicory with the dressing and rub it into the leaves with your hands. Mix with the mushrooms and couscous, stir and place on the ricotta.

Try and, if necessary, add a little more balsamic vinegar, salt or pepper to emphasize the taste.
