Required products :

  • 1 1/4 tea cup vegetable broth
  • 1 1/4 tea cup water
  • 2 teaspoons couscous
  • 1 pinch of salt and pepper
  • 5 tablespoons olive oil
  • 1/2 teaspoon cedar nuts
  • 4 cloves garlic
  • 1 shallot, finely chopped
  • 1/2 cup chopped black olives (pitted)
  • 1/3 tea cup chopped sun-dried tomatoes
  • 1 teaspoon vegetable broth
  • 1/4 teaspoon parsley

Method of preparation :

Put a quarter cup of broth and water in a saucepan to bring to a boil. Add the couscous and season with salt and pepper. Reduce heat and simmer for 8 minutes.

Heat 3 tablespoons olive oil in a pan and roast the pine nuts, stirring often for about 1 minute. Transfer to a plate.

Heat the remaining 2 tablespoons of olive oil in the same pan and fry the onion and garlic for 2 minutes. Add the olives and tomatoes, leave to warm for 2-3 minutes, stirring occasionally.

Slowly pour the remaining 1 cup of broth and stir, let the mixture simmer until the sauce thickens - about 10 minutes.

Transfer the couscous to a large bowl, pour in the vegetables, sprinkle with the pine nuts and parsley and serve. If desired, you can taste with a few drops of lemon juice.
