Heat olive oil in a large saucepan. Fry the onion and garlic inside for 5-6 minutes, stirring occasionally. Pour the chicken broth and wait until it boils.
Add the zucchini and stir. Season with thyme and salt and cook for 3-4 minutes until the zucchini are soft.
Finally, pour the cherry tomatoes and couscous, stir and remove from the heat. Cover the pan and leave for at least 5 minutes for the broth to absorb well.
Serve the finished appetizer while warm. You can decorate with parsley leaves or fresh thyme. Enjoy your meal!
