Method of preparation :
Pour the couscous into a saucepan, add a little olive oil, add a pinch of salt, pour boiling water and leave for 10 minutes (do not boil).
In a dry pan, roast the almond leaves until lightly golden.
Cut the zucchini into quarters and fry, adding a little garlic to them. Add salt and almond leaves, then olives (cut in halves and pitted). Let everything fry for a while and then mix with the already softened couscous grains.
Sprinkle the dish with grated lemon peel and serve with a decoration of basil leaves.
