How To Cook Couscous With Zucchini, Olives And Almond Leaves - Recipe

Learn how to cook "Couscous with zucchini, olives and almond leaves". Delicious recipe.

Required products :

  • 6 tablespoons couscous
  • 6 olives
  • 1/2 zucchini
  • 2 sprigs of fresh basil
  • 2 tablespoons olive oil
  • 1 teaspoon grated lemon peel
  • almond leaves, black pepper, salt, garlic

 

Method of preparation :

Pour the couscous into a saucepan, add a little olive oil, add a pinch of salt, pour boiling water and leave for 10 minutes (do not boil).

In a dry pan, roast the almond leaves until lightly golden.

Cut the zucchini into quarters and fry, adding a little garlic to them. Add salt and almond leaves, then olives (cut in halves and pitted). Let everything fry for a while and then mix with the already softened couscous grains.

Sprinkle the dish with grated lemon peel and serve with a decoration of basil leaves.
