Required products :

15 crabs
2 carrots
2 onions
1 celery root
250 milliliters of dry white wine
50 milliliters of cognac
juice of 1 lemon
2 tablespoons sugar
pinch of hot red pepper
100 grams of
ground black pepper and salt to taste
béchamel sauce

Method of preparation :

Finely chop onions, carrots and celery. Fry them in a small amount of hot oil, add a pinch of sugar, salt and ground black pepper to taste. Let everything simmer for 35 minutes. Then pour the white wine into the vessel and leave the mixture for another 15-20 minutes on the stove.

Boil the crabs, add them to the vegetables, add a pinch of pepper and let them simmer for 15 minutes. Then take them out, clean them, grind and add to the finished Béchamel sauce. Put the pan on low heat, pour the freshly squeezed lemon juice, stir thoroughly and 3 minutes later remove from the heat.

Then add the butter, pour the cognac, add a pinch of red pepper, sugar and stir. Combine the two mixtures and serve the sauce with fish dishes.
