Required products :

  • 10 grams of gelatin
  • 2 radishes
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 1 bunch sorrel
  • 120 milliliters of liquid cream

 

Method of preparation :

Wash the sorrel and put for a minute in boiling salted water, which is then drained with a colander. Grind the leaves with a blender to puree.

Pour gelatin with cold water, which you have previously boiled.

In a separate bowl, pour 25 milliliters of water, add sugar and salt, place on the stove and let the liquid boil until the spices are completely dissolved.

Then remove the bowl from the heat and add the drained gelatin to the hot syrup. Stir until the latter dissolves and add the sorrel puree. Stir thoroughly.

Whip the cream to a froth.

Place the bowl with the green mixture in a water bath and add the whipped cream in portions, stirring thoroughly all the time. Remove from heat.

Wash the radishes and cut into thin circles. Arrange a few of them on the bottom of the mousse containers, letting them overlap to form a flower.

Distribute the mousse, cover with plastic wrap and store in the refrigerator (for about 2-3 hours).
