How To Cook Cream Of Asparagus Soup With Lemon And Parmesan - Recipe

Learn how to cook "Asparagus cream soup with lemon and parmesan". Delicious recipe.

Required products :

  • 1 kg of asparagus
  • 3 tablespoons unsalted butter
  • 1 large head of yellow onion, finely chopped
  • 3 cloves garlic, pressed
  • 6 tea cups homemade chicken broth
  • salt and freshly ground black pepper
  • 2 tablespoons freshly squeezed lemon juice
  • 1/4 tea cup grated Parmesan cheese
  • handful of fresh herbs / thyme, dill, basil /

Method of preparation :

  • Melt the butter in a large saucepan over medium heat.
  • Add the onion and garlic and saute for 10 minutes until soft.
  • Meanwhile, cut off the tops of the asparagus and set them aside.
  • Finely chop the rest and add to the pan.
  • Add the chicken broth, 1 teaspoon of salt and 1/4 teaspoon of freshly ground black pepper.
  • Stir and bring the soup to a boil.
  • Reduce heat and simmer for 30 minutes.
  • During this time, blanch the cut tips in boiling and salted water for about 2-3 minutes. Drain and transfer to a bowl of cold water.
  • Remove the soup from the heat and puree until smooth. Strain to remove the fibers.
  • Return the asparagus cream soup to the pan and bring to a boil.
  • Add the lemon juice and parmesan. Season with salt and pepper and stir.
  • Pour into bowls and add a few blanched asparagus tips to each.
  • Garnish with grated Parmesan cheese and fresh herbs and serve.
