Required products :

  • 450 grams of black beans
  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, chopped
  • 3 teaspoons vegetable broth (or beef broth)
  • 3 teaspoons water
  • 1/4 tea cup dark rum (or apple cider)
  • 1 teaspoon barbecue sauce
  • 1 and 1/2 teaspoons ground cumin
  • 1 and 1/2 teaspoons dried basil
  • 1 green pepper, cut into cubes
  • 1 large diced tomato

Method of preparation :

Put the beans in a saucepan and add enough cold water to cover the beans. Bring to a boil and cook for 2 minutes without a lid. Remove from the heat, cover and leave for 1 hour. Drain and set aside.

In the same pan, heat the olive oil and fry the onion and garlic, stirring often, until the vegetables are soft. Pour the vegetable broth, water, dark rum (or apple cider), barbecue sauce, cumin, basil, green pepper, tomato and beans. Boil for 2 minutes, reduce heat, cover and simmer over low heat for 2 hours or until beans are soft.

Carefully blend or puree the soup to a creamy consistency. Serve with liquid cream and pieces of red onion if desired.
