Smoked paprika and gouda give broccoli cream a pleasant smoky taste. If you can't find smoked gouda cheese, you can try smoked cheddar cheese or plain yellow cheese.

Necessary products:

  • 2 medium heads of broccoli
  • 2 tablespoons extra virgin olive oil
  • 1 cup diced tea
  • 2 cloves garlic, chopped
  • 1 tablespoon flour
  • 4 teaspoons chicken broth
  • 1 teaspoon smoked gouda cheese, grated
  • 2 teaspoons white wine vinegar
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground white pepper
  • rye bread cut into cubes
  • smoked paprika

Method of preparation:

Cut 1 head of broccoli into small cubes and the other head into slightly larger ones.

Heat 1 tablespoon olive oil in a large saucepan over medium heat and fry the onions, stirring often, until soft. Add the garlic and stir for about 30 seconds, then add the flour and smoked paprika. Stir and add the chicken broth and diced broccoli. Bring the soup to a boil over high heat, then reduce the temperature and simmer, stirring often, until the broccoli is tender.

Heat 1 tablespoon olive oil in a large skillet over medium heat and bake the croutons until nicely golden brown and crispy, then pour them into a bowl. Another option is to bake them for a few minutes in an oven preheated to 200 degrees.

Puree the soup, if necessary, in batches in a blender. You can also use an immersion blender, but be careful not to burn yourself. Return the soup to the heat over low heat and gradually add the smoked gouda cheese, stirring constantly until it melts. Add the remaining broccoli and cook, stirring for 2-3 minutes, until bright green.

Season with white wine vinegar, salt and white pepper. Serve garnished with croutons.
