How To Cook Cream Of Carrot And Orange Soup - Recipe

Required products :

  • 1 1/2 kilograms of carrots, peeled and sliced
  • 1 teaspoon freshly squeezed orange juice
  • 2 tea cups sweet onion, cut into cubes
  • 3 cloves garlic, pressed
  • 5 tea cups of vegetable broth / and additionally, if necessary /
  • 1-2 teaspoons of coconut oil / or cold pressed olive oil /
  • 2-3 tablespoons freshly grated ginger
  • 3/4 tea cup raw cashews soaked in water
  • salt and pepper

Method of preparation :

  • Soak the cashew nuts for a minimum of 30 minutes.
  • In a deep saucepan, heat the butter over medium heat and sauté the garlic and onion for about 3-5 minutes.
  • Add the carrots, orange juice, vegetable broth and ginger. Stir, bring to a boil and simmer on low heat for 20 minutes (or until the carrots are fully cooked). Allow the soup to cool for about 10 minutes.
  • Rinse the cashews and drain. Pour the soup into a blender (you may need to do it twice) and add the nuts. Strain well.
  • Season with salt and pepper and add vegetable broth if necessary.
  • Divide the cream soup into bowls and garnish with whole cashew nuts, parsley and grated orange peel.
