Necessary products:

 

  • 500 grams of carrots, peeled and sliced
  • half a ginger root, peeled
  • 3 cloves garlic, peeled
  • 1 small onion
  • olive oil
  • 300 milliliters of coconut milk
  • 3-4 teaspoons of vegetable broth
  • 1/2 teaspoon turmeric
  • 1 teaspoon curry powder
  • salt and pepper to taste
  • juice of half a lemon or lime
  • chili to taste
  • chopped fresh basil for decoration

 

Method of preparation:

 

Put the carrots, ginger, garlic and onion in a saucepan. Pour the broth and boil the vegetables. Cool the mixture and beat with a blender until smooth.

 

Dilute with coconut milk and add turmeric, curry, salt, pepper, lemon juice and chili to taste. Stir, heat the soup and distribute it in bowls. Sprinkle with basil and serve.
