How To Cook Cream Of Carrot Soup With Ginger And Lime - Recipe

Learn how to cook "Cream of carrot soup with ginger and lime". Delicious recipe.

Required products :

  • 450 grams of carrots, peeled and diced
  • 1 tablespoon olive oil
  • 3 tablespoons finely grated ginger
  • 2 cloves garlic, pressed
  • 1/2 head of garlic, finely chopped
  • 2 teaspoons vegetable or chicken broth
  • 1 lime
  • salt and freshly ground black pepper

For garnish :

  • sour cream
  • green onions, finely chopped

Method of preparation :

  • Heat olive oil in a saucepan over medium heat.
  • Saute the ginger, garlic and onion for about 2 minutes until soft.
  • Add the broth and carrots and cook for another 30 minutes until the carrots are cooked.
  • Remove the pan from the heat and carefully mash the soup to a smooth consistency.
  • Add the freshly squeezed juice of half a lime and cut the other half.
  • Stir and season with salt and freshly ground black pepper.
  • Pour the carrot cream soup into bowls, garnish with sour cream and sprinkle with chopped green onions.
  • Serve it hot with lime slices and enjoy.
