How To Cook Cream Of Carrot Soup With Roasted Chickpeas - Recipe

Required products :

  • 900 grams of diced carrots
  • 1 medium onion, chopped
  • 4 cloves garlic, pressed
  • 4 teaspoons vegetable broth
  • 2 tablespoons olive oil
  • 1/2 teaspoon cumin
  • 1/4 teaspoon coriander
  • 1 pinch of paprika

For garnish :

  • roasted chickpeas
  • full-fat yogurt flavored with herbs
  • lemon juice
  • fresh parsley

Method of preparation :

 

  • Heat olive oil in a large saucepan over medium-high heat.
  • Add the carrots, onions, garlic and spices and fry until lightly browned.
  • Add the broth and after the soup boils, simmer under a lid for about 30 minutes. Stir periodically.
  • Puree in a blender or blender until smooth.
  • Serve the carrot cream soup, garnished with flavored yogurt and sprinkled with roasted chickpeas, lemon juice and parsley leaves.
