The soup. Melt the butter in a large saucepan over medium heat. Add the chopped onion, celery, carrot and garlic. Put 1/2 teaspoon of salt and fry, stirring, until the products are soft (about 8 minutes). Then pour the broth, 2 teaspoons of water and put the bay leaf. Let the soup boil for 5 minutes.
Cut the chestnuts and pour them into the pot with the other products. Boil until soft (about 10 minutes). Remove the bay leaf.
Puree the soup with a blender, then return it to the pan and let it boil once more. Then add the cream, wine and salt to taste.
The garnish. Melt the butter over medium heat in a suitable pan. Pour the bread cubes and fry until golden (about 3 minutes) and take them out into a bowl. Mix parsley and cornstarch. Heat oil (up to 180 degrees) and fry parsley in it. A crispy crust should form (about 30 seconds). Remove on a paper towel to drain off excess fat and sprinkle with salt.
Spread the soup on a plate or bowl and serve with the croutons and parsley.
