How To Cook Cream Of Fresh Potato Soup With Broccoli, Parsley And Basil - Recipe

Required products :

  • 600 grams of fresh potatoes
  • 250-300 grams of frozen broccoli
  • connection fresh basil
  • 2-3 stalks of fresh dill
  • connection fresh parsley
  • 1 liter of potato decoction (the broth in which you boil the potatoes)
  • 150 milliliters of olive oil
  • 1 teaspoon celery
  • 1/2 teaspoon salt
  • 1 teaspoon butter
  • cooking cream

 

Method of preparation :

Put the potatoes in a saucepan, fill them with a liter of water, add salt and celery. Put on the stove, wait for the water to boil, reduce the temperature, and cook for 20 minutes on low heat.

In another saucepan, boil salted water, put the broccoli in it, reduce the heat and cook for 10 minutes.

Mix 1 teaspoon of olive oil with finely chopped green spices.

Transfer the boiled potatoes to a blender, pour a liter of their decoction, add the broccoli, butter, 6 tablespoons of olive oil, and the spice mixture. Grind to a creamy consistency.

Pour cooking cream into the hot soup and distribute it in suitable serving dishes.

Decorate the portions with fresh green spices, you can also add crispy croutons.
