How To Cook Cream Of Lettuce Soup With Garlic And Parsley - Recipe

Required products :

  • 2 tablespoons unsalted butter
  • 1 medium onion, finely chopped
  • 4 cloves garlic, finely chopped
  • 2 tea cups homemade chicken broth / or vegetable /
  • 230 grams of lettuce leaves, well washed and drained
  • 1/4 tea cup of fresh parsley leaves
  • left cashier
  • freshly squeezed lemon juice

For garnish :

  • radishes cut into thin strips
  • fresh herbs

Method of preparation :

  • Melt the butter in a saucepan over medium heat.
  • Saute onion and garlic and for 3 minutes until soft.
  • Add the broth, stir and bring the mixture to a boil.
  • Cook for about 8 minutes, then add the lettuce and parsley. After another 2-3 minutes, remove the pan from the heat.
  • Mash for 2-3 minutes until smooth. If the soup is too thick, add some more of the broth and mix well.
  • Season with salt and a few drops of freshly squeezed lemon juice.
  • Serve the cream lettuce soup warm, garnished with radishes and fresh herbs.
