Required products :

  • 1/4 tea cup olive oil
  • 2 onions, finely chopped
  • 2 stalks of celery, cut
  • 4 cloves garlic, cut into thin slices
  • 2 teaspoons raw cashews
  • 2 tablespoons brown sugar
  • 1 teaspoon hot pepper flakes
  • 1 kg of frozen green peas
  • 1 tablespoon malt vinegar

Method of preparation:

Fry onion, celery and garlic in olive oil for about 30-40 minutes, stirring often. If necessary, add a little water so as not to burn the vegetables on the bottom of the dish. Season with salt and pepper and add the cashews, sugar, hot pepper and 3 cups of water. Cook until the vegetables soften and begin to disintegrate in the water - about 10-15 minutes.

Add the peas to the soup and blend until smooth. If necessary, add a little water. For best results, strain the soup to have the smoothest and most creamy mixture possible.

Add the malt vinegar and stir.

When serving, sprinkle with green onions if desired or add chips or bruschettas for crunchiness.
