Colorful cream of potato soup with peas and aromatic mint. Serve with crispy and spicy croutons if desired.

Required products :

  • 2 teaspoons vegetable oil
  • 1 onion, chopped
  • 800 grams of potatoes, peeled and cut into small cubes
  • 1 liter of vegetable broth
  • 350 grams of frozen peas
  • a handful of fresh mint leaves, chopped
  • croutons, optional

Method of preparation :

Fry the onion in hot vegetable oil for 5 minutes or until soft. Pour the potatoes and vegetable broth and bring to a boil, then reduce the temperature and simmer for 10-15 minutes until the potatoes are soft. Add the peas 2 minutes before removing the soup from the heat.

Using a slotted spoon, separate 1/4 of the cooked vegetables and set aside, blending the rest until smooth. Return the reserved vegetables to the cream soup, add the mint leaves, season to taste and serve with croutons if desired.
