How To Cook Cream Of Pumpkin Soup With Carrots And Tomatoes - Recipe

Learn how to cook "Pumpkin cream soup with carrots and tomatoes". Delicious recipe.

Required products :

  • 1 large onion, cut into cubes
  • 3 cloves garlic, pressed
  • 5 carrots, peeled and sliced
  • 1 kg of pumpkin, peeled and cut into cubes
  • 2 stalks of celery, finely chopped
  • 800 grams of canned tomatoes
  • 5 teaspoons bone broth
  • 1/2 cup fresh parsley leaves, finely chopped
  • 1/2 cup fresh basil leaves, finely chopped
  • salt and pepper to taste
  • 3 tablespoons butter
  • cooking cream for garnish

Method of preparation :

  • Melt the butter in a large saucepan over low heat.
  • Saute carrots, onions, garlic, celery and pumpkin for 10 minutes.
  • Add the tomatoes and broth and simmer for about 40 minutes until the pumpkin is soft.
  • Remove the pan from the heat and add the parsley and basil.
  • Stir and season with salt and freshly ground black pepper to taste.
  • Puree to a smooth consistency and pour the pumpkin cream soup into bowls.
  • Garnish with cream and serve with a smile.
