How To Cook Cream Of Pumpkin Soup With Fresh Onion And Garlic - Recipe

Required products :

  • 1 1/2 kilograms of pumpkin, cut lengthwise in half
  • 1 onion, peeled
  • 1 head of garlic
  • 2 tablespoons olive oil
  • 3/4 teaspoon salt
  • pepper
  • 4 teaspoons fresh milk

For garnish :

  • cream
  • fresh parsley, finely chopped
  • garlic bread

Method of preparation :

 

  • Preheat oven to 180 degrees.
  • Place the pumpkin in a large pan with the cut part facing up. Do not peel or remove the seeds.
  • Wrap the garlic in foil and add it to the pan along with the onion.
  • Bake for about 70-80 minutes until the pumpkin is soft.
  • Pour 2 tea cups of fresh milk into the blender.
  • Remove the pumpkin seeds and use a spoon to carve the flesh of one half of the pumpkin. Add to the blender.
  • Peel a squash, grate it and add 1/2 of it to the blender.
  • Peel the garlic and also add 1/2 of it to the blender.
  • Mash until smooth and season with salt and pepper. If the cream soup is too thick, add a little milk or water and mash again.
  • Pour into bowls and repeat with other products.
  • Garnish pumpkin cream soup with cream, sprinkle with fresh parsley and serve with warm garlic slices of bread.
