  • 6 tea cups leeks, finely chopped
  • 4 cloves garlic, chopped in bulk

  • 5 tablespoons maple syrup
  • 1 1/2 teaspoons salt
  • 1/2 teaspoon cumin
  • 1/8 teaspoon hot red pepper
  • 1 1/2 teaspoons fresh thyme
  • 1 1/2 teaspoons fresh sage
  • 1/4 tea cup whole cream

For garnish :

  • fresh thyme leaves

Method of preparation :

 

  • Melt the butter in a large saucepan over medium heat.
  • Add the leeks and garlic and sauté for 10 minutes until soft. Stir periodically.
  • Add the pumpkin puree, sliced ​​apple, broth, maple syrup, salt, cumin, hot red pepper, thyme and sage.
