Beetroot is a very useful vegetable, but often neglected due to its special taste. Peel and cut the red beets and onions into large slices. Heat the rapeseed oil in a saucepan over medium heat and add the vegetables and garlic cloves. Allow to simmer until soft.
Pour the broth (enough to cover the vegetables) and add 2 tablespoons of hibiscus flowers. Put the lid on and simmer on low until the beets are cooked through. Wait for the soup to cool briefly and blend it to get a smooth consistency.
Season with salt and pepper. Serve the soup in bowls, sprinkle with hyacinth leaves and a spoonful of cream.
