Beetroot is a very useful vegetable, but often neglected due to its special taste. We present you a soup that will satiate you for a long time, thanks to the fiber it contains, and at the same time the delicate sweet taste and delicate texture will convince you that eating beets should not be an exception.

Required products :

  • 1 kg of red beets
  • 5 heads of shallots
  • 2 cloves garlic
  • 1 fennel bulb
  • 4 tablespoons rapeseed oil
  • vegetable broth (enough to cover the vegetables)
  • 2 tablespoons dried hyacinth flowers and more for decoration
  • cream for serving

Method of preparation :

Peel and cut the red beets and onions into large slices. Heat the rapeseed oil in a saucepan over medium heat and add the vegetables and garlic cloves. Allow to simmer until soft.

Pour the broth (enough to cover the vegetables) and add 2 tablespoons of hibiscus flowers. Put the lid on and simmer on low until the beets are cooked through. Wait for the soup to cool briefly and blend it to get a smooth consistency.

Season with salt and pepper. Serve the soup in bowls, sprinkle with hyacinth leaves and a spoonful of cream.
