How To Cook Cream Of Roasted Garlic Soup With Parmesan And Thyme - Recipe

Required products :

  • 26 cloves unpeeled garlic
  • 2 tablespoons olive oil
  • 30 grams of butter
  • 2 1/4 tea cups cut into thin onion rings
  • 1 1/2 teaspoons chopped fresh thyme
  • 18 peeled garlic cloves
  • 3 1/2 teaspoons chicken broth
  • 1 1/2 teaspoons whipped liquid cream
  • about 500 grams of grated Parmesan cheese
  • 4 lemon and rezena

 

Method of preparation :

Preheat oven to 180 degrees.

Put the unpeeled garlic cloves in a small bowl, pour 2 tablespoons of olive oil, season with salt and pepper, cover the dish with foil and place in the oven for about 45 minutes (until the garlic softens). When cool, peel.

 

Melt the butter in a saucepan over medium heat, add the onion, thyme and cook until the onion is translucent (about 6 minutes). Then add all the garlic (both roasted and raw), 3 minutes later pour the broth, close the jar with a lid and cook for about 20 minutes (until the cloves soften).

Puree the soup with a blender, return it to the pan and add the cream. Once the mixture boils, add salt, pepper and distribute in suitable bowls / plates. Sprinkle each portion with grated Parmesan cheese, serve with a slice of lemon and croutons if desired.
