How To Cook Cream Of Tomato Soup With Avocado And Garlic - Recipe

Learn how to cook "Cream of tomato soup with avocado and garlic". Delicious recipe.

Required products :

  • 1 tablespoon olive oil
  • 3/4 tea cup, finely chopped onion
  • 2 cloves garlic, pressed
  • 400 grams of canned tomatoes
  • 2 tablespoons tomato paste
  • 1 1/2 teaspoon tomato juice
  • 3 teaspoons chicken broth
  • 2 teaspoons sugar
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 ripe avocados
  • 1/2 teaspoon dried thyme

Method of preparation :

  • Heat olive oil in a large saucepan over medium heat.
  • Add the onion and saute for 5 minutes, stirring often.
  • Add the garlic and cook for another 1 minute.
  • Add the canned tomatoes, along with the juice, tomato paste, tomato juice, broth, sugar, salt and pepper.
  • Stir and increase the heat until the soup boils.
  • Reduce to medium heat and simmer for 5 minutes.
  • Remove from the heat and wait 5-10 minutes to cool.
  • Peel an avocado and cut it in half. Remove the nut.
  • Cut one half into slices and the rest of the avocado into cubes.
  • Add the cubes to the soup and puree until smooth.
  • Pour into bowls, garnish with a few slices of avocado and dried thyme.
  • Submit and enjoy.
