How To Cook Cream Of Tomato Soup With Fresh Basil And Garlic - Recipe

Learn how to cook "Tomato cream soup with fresh basil and garlic". Delicious recipe.

Required products :

  • 6 medium-sized tomatoes, cut in bulk
  • 1 onion, chopped in bulk
  • 2 cloves garlic
  • 1 medium-sized potato, cut in bulk
  • 4 teaspoons vegetable broth
  • 2 tablespoons tomato paste
  • salt and freshly ground black pepper to taste
  • a pinch of dried parsley
  • a pinch of dried basil
  • a handful of fresh basil leaves
  • 2 tablespoons oil

For garnish :

  • garlic croutons
  • 1 onion, finely chopped
  • 2-3 slices of bacon, cut into cubes

Method of preparation :

  • Heat the oil in a large saucepan over medium heat.
  • Add the tomatoes, onions and garlic and cook for about 2-3 minutes until the onions are soft.
  • Add the potatoes, vegetable broth and tomato paste.
  • Stir and season with salt, pepper and dried herbs.
  • When the soup boils, reduce the heat and simmer for 30 minutes until the potatoes are soft.
  • Meanwhile, fry the bacon in a large skillet over medium heat. Transfer it to kitchen paper to drain off excess fat.
  • Stew onions in the same pan for about 1-2 minutes, stirring often.
  • Remove the soup from the heat and puree until smooth.
  • Add the fresh basil and mash again.
  • Divide the tomato cream soup into bowls and garnish with garlic croutons, stewed onions and toasted bacon.
  • Serve it warm with extra croutons.
