How To Cook Cream Of White Bean Soup With Roasted Mushrooms, Onions And Garlic - Recipe

Learn how to cook "Cream of white bean soup with roasted mushrooms, onions and garlic". Delicious recipe.

Required products :

  • 450 grams of mushrooms, cut into halves or quarters
  • 2 large onions, cut into quarters
  • 3 cloves garlic, lightly crushed
  • 1-2 tablespoons olive oil
  • 1 1/2 teaspoons salt
  • 1 1/2 teaspoons black pepper
  • 8-10 leaves of fresh sage
  • 8-10 stems + 1 tablespoon fresh thyme
  • 6 tea cups chicken or vegetable broth
  • 430 grams of white canned beans, not drained
  • salt and pepper to taste

Method of preparation :

 

  • Preheat oven to 230 degrees and cover pan with parchment paper.
  • Season the mushrooms, onion and garlic with olive oil, 1 teaspoon of salt and 1 teaspoon of black pepper.
  • Divide the mushrooms in half of the pan and place the garlic and onion in the other half.
  • Add the sage leaves and thyme stalks and bake for about 10 minutes. Stir and bake for another 15 minutes.
  • Meanwhile, heat the broth, beans, 1/2 teaspoon salt, 1/2 teaspoon black pepper and 1 tablespoon fresh thyme in a large saucepan over medium heat.
  • Let the mixture simmer until the vegetables are cooked through.
  • Transfer to a blender 2 teaspoons white beans, 1 teaspoon broth and roasted onions, garlic and herbs. Mash to a smooth consistency.
  • Return the mixture to the pan and add the roasted mushrooms. Season with salt and pepper to taste and stir.
  • Serve the white bean cream soup warm, garnished with fresh herbs.
