How To Cook Cream Of Zucchini Soup With Coconut Milk And Garlic - Recipe

Required products :

  • 2 large zucchini, finely chopped
  • 1/2 head red onion, finely chopped
  • 2 cloves garlic, pressed or finely grated
  • 2 tablespoons olive oil
  • 2 teaspoons coconut milk, full fat
  • 1 teaspoon vegetable broth
  • 2 lemons, freshly squeezed
  • 1 teaspoon sea salt
  • freshly ground black pepper to taste

For garnish / optional / :

  • fresh dill, parsley
  • cedar nuts, pumpkin seeds, chickpeas
  • lemon slices
  • pieces of avocado

Method of preparation :

  • Heat olive oil in a large skillet over medium heat.
  • Add the zucchini, onion and garlic and sauté for about 4-5 minutes until soft.
  • Add 1/2 tea cup of vegetable broth and continue cooking for another 10 minutes.
  • Transfer the vegetable mixture to a blender and add the remaining ingredients. Mash to a smooth consistency.
  • Pour into bowls, garnish and serve.

Note!

Store the soup in an airtight container in the refrigerator .
