How To Cook Cream Of Zucchini Soup With Parmesan, Cream Cheese And Garlic - Recipe

Required products :

  • 2 large zucchini, cut into cubes
  • 50 grams of grated Parmesan cheese
  • 2 tablespoons cream cheese
  • 2 tablespoons olive oil
  • 1 cube vegetable broth
  • 1 clove of garlic, pressed

Method of preparation :

  • Heat olive oil in a saucepan over medium heat.
  • Add the zucchini and garlic and saute for 5 minutes.
  • Cover them with water and crush the broth cube on top.
  • Stir and cook for about 20 minutes, stirring occasionally.
  • Drain the broth, keeping a small part of it.
  • Add the grated parmesan and cream cheese and puree until smooth.
  • Pour the zucchini cream soup and serve.
