How To Cook Cream Rice With Caramelized Fruits - Recipe

Required products :

2 teaspoons boiled rice
3 egg yolks
500 milliliters of liquid cream
100 grams of sugar

For caramelized fruits:

80 grams of butter
150 grams of sugar
1 sweet and sour apple
1 pear
2 bananas
100 grams of cranberries
1 cinnamon stick
2 stars anise
cardamom to taste

Method of preparation :

Mix the cream and rice in a suitable bowl, place on the stove and wait for the liquid to boil over medium heat. Then reduce the temperature and let the rice cook for 10 minutes.
During this time, start caramelizing the fruit.
Cut the apple and pear into thin slices, removing the core with the seeds, of course. Peel a banana and cut it into 1/2 inch thick circles.
Melt the butter in a large skillet over medium heat. Put in it the cinnamon stick, divided in two lengthwise, also anise and cardamom. Sprinkle them with an even layer of sugar, on which arrange the slices of apple and pear (it is better to have one row of fruit).
Increase the heat to medium and let the fruit cook for about 5 minutes until golden on one side. Then turn from the other for the same time.
It is time to add the bananas, blueberries and 2-3 minutes later remove the pan from the heat (blueberries should burst).
In a separate bowl, mix the yolks with the sugar and, beating with a wire whisk, add to some of the rice with the cream. Pour in the remaining rice and let everything cook over low heat, stirring constantly for about 5 minutes, until the porridge thickens.

It remains to distribute it in plates or bowls and serve with the fruits and syrup that was released during their caramelization.
