Learn how to cook "Cream soup of roasted garlic and tomatoes with toast and cheese". Delicious recipe.
Required products :
1 white bread
7 tablespoons olive oil
6 tablespoons grated cheese
15 tomatoes
1.5 tablespoons balsamic vinegar
3 tablespoons brown sugar
1 tablespoon salt
1 tablespoon ground black pepper
1 tablespoon red pepper flakes
2 teaspoons Italian spices
3 heads of garlic + 2 cloves
1 onion
connection basil
1/4 tea cup chopped parsley
3 teaspoons chicken broth
1 cup crushed breadcrumbs (croutons)
1/2 teaspoon parmesan
Method of preparation :
Cut 6 slices of bread about 1 cm thick, sprinkle with olive oil, arrange in a tray lined with baking paper and bake in the oven until golden.
When you take it out of the oven, sprinkle each slice with 1 tablespoon of grated yellow cheese and bake until the latter melts. Then cut each slice in half diagonally to obtain 12 pieces (leave warm).
Cut the tomatoes in half and place them in a large bowl. Add 2 tablespoons olive oil, balsamic vinegar, sugar, salt, red pepper and Italian spices. Stir. Transfer the tomatoes to another pan and place in a preheated oven to bake for 45 minutes.
Cut off the top of the whole heads of garlic (as seen in the photo), add 2 tablespoons of olive oil and wrap the fragrant vegetables in foil.
Put it in the oven next to the tomatoes, let it bake for about 40 minutes.
When the products are ready, cool them a bit. Put a soft garlic mass in a bowl, removing the flakes.
Pour the remaining 2 tablespoons of olive oil into a large saucepan and heat over medium heat. Add finely chopped onion and two cloves of crushed garlic. Fry until the onion is translucent and until a pleasant aroma appears.
Then pour the roasted tomatoes (along with the juice separated in the pan) and garlic into the bowl.
Put the finely chopped basil, parsley and stir. Pour in the chicken stock and rusks (maybe croutons) and let the soup cook for 20 minutes without closing the pan with a lid.
It's time for the parmesan, add it to the other products and mash the soup until you get a puree. Season with salt and pepper if desired.
Distribute the cream soup in suitable plates and serve with 2 pieces of baked bread with yellow cheese.
