How To Cook Cream-soup Of Spinach And Zucchini With Pumpkin Seeds And Garlic - Recipe

Required products :

  • 300 grams of fresh spinach leaves
  • 2 small young zucchini
  • 3 cloves garlic
  • 0.5 liters of cooking cream with a fat content of 25%
  • 0.5 liters of water
  • ground black pepper
  • 3-4 tablespoons olive oil
  • a little chopped dill or parsley to serve
  • roasted pumpkin seeds for serving

 

Method of preparation :

Chop the garlic, peel the zucchini if ​​desired and remove the seeds.

Heat a small amount of olive oil in a saucepan over low heat and add the garlic. Fry it for a minute or two, stirring until it releases its aroma.

Add the chopped zucchini and fry for 5 minutes with the garlic, stirring occasionally.

Then put the spinach leaves in a saucepan (if there are too large ones among them, chop them) and cook the mixture for 10 minutes (do not stop stirring from time to time).

Pour the cream and water (you can replace the cream with fresh milk). When the soup boils, reduce the heat and simmer for about half an hour. Season with salt and pepper.

When you remove from the heat, puree it with a blender.

Divide into bowls and sprinkle each serving with dill and pumpkin seeds.
