Required products :

  • 3 teaspoons chicken broth
  • 1 leek, chopped / only the white part /
  • 1 stalk of celery, chopped
  • 1 small onion, chopped
  • 2 tablespoons cornstarch
  • 2 tablespoons cold water
  • 1 teaspoon cheddar cheese, grated
  • 1 pinch of salt
  • 1 pinch freshly ground black pepper
  • 1 pinch of nutmeg
  • 1 egg yolk
  • 1/2 teaspoon cream
  • 1/4 tea glass of dry white wine

Method of preparation :

  • In a large saucepan, heat the chicken broth, leeks, celery and onions over medium heat.
  • When the mixture boils, reduce the heat and simmer under a lid for about 45 minutes, stirring occasionally.
  • Strain and return only the broth to the stove over medium heat.
  • In a small bowl, mix the cornflour and water. Stir until smooth.
  • Add it to the broth and stir until thickened.
  • Sprinkle with grated cheese and stir again until completely melted.
  • Season with salt, pepper and nutmeg.
  • In a bowl, beat the egg yolk and cream with a fork.
  • Add 1/2 teaspoon of warm soup and stir until smooth.
  • Return the mixture to the pan and stir continuously for about 2 minutes.
  • Remove the soup from the heat and add the white wine. Stir.
  • Distribute the cream soup in bowls and garnish as desired.
  • Serve it warm with fresh bread and enjoy it.
