Required products :

  • 6 slices of bacon, finely chopped
  • 3 tablespoons butter
  • 1 medium onion, finely chopped
  • 3 tablespoons flour
  • 4 teaspoons chicken broth
  • 3 large potatoes, cut into cubes
  • 1 teaspoon Himalayan salt (ground)
  • 1/2 teaspoon black pepper and garlic granules
  • 2 tea cups grated cheddar + more to serve
  • 1/4 tea cup cream
  • 4 teaspoons frozen corn
  • 4 green onion stalks, finely chopped

Method of preparation :

In a large saucepan, fry the bacon until crispy. Transfer to a plate and discard the fat.

Put the butter in the same pan and fry the onion in it, season with half the salt and spices. Fry for 4 minutes and add the flour. Stir, and when browned, add the broth, potatoes and remaining salt.

Reduce heat to low and cook for 8-10 minutes, until done. Add the cream, cheddar, corn, bacon and half the onion.

Cook for about 2-3 minutes.

Serve the soup warm with extra green onions and cheddar.
