Sometimes we are left with chicken or turkey that has already been cooked in some way, which can easily be used the next day to make a delicious soup to serve with crispy croutons and salad.
Required products :

Method of preparation :
Heat olive oil in a large saucepan over medium heat. Add the mushrooms, celery, carrots and shallots and cook, stirring, until softened for about 5 minutes.
Add the flour, salt and pepper and cook, stirring, for another 2 minutes. Pour the chicken broth and bring to a boil. Add the rice and reduce the heat. Cover and cook until rice is soft or about 5-7 minutes.
Add the turkey pieces (or chicken), sour cream and parsley and cook until it starts to boil, then remove from the heat.
Serve the soup hot or cold. Optionally with crispy croutons and salad.
