How To Cook Cream With Fruit, Hazelnuts And Crispy Crumbs - Recipe

Required products :

  • 4 small pears, cut into 2 cm pieces
  • 2 tablespoons lemon juice
  • 4 1/2 tablespoons sugar
  • 2 apples, sliced ​​like peaches
  • 16 blueberries
  • 40 grams of wholemeal flour
  • 40 grams of white flour
  • 50 grams of butter - cold and cut into cubes
  • 25 grams of soft brown sugar (like muscovado)
  • pinch of salt
  • 100 grams of hazelnuts

for cream:

  • 150 milliliters of cream
  • 100 milliliters of yogurt (full fat)
  • 100 milliliters of mascarpone
  • 1 tablespoon sugar
  • 1/2 teaspoon vanilla essence
  • 1/2 teaspoon ground cardamom
  • 1/2 teaspoon ground star anise

Method of preparation :

Preheat oven to 180 degrees.

Mix the pears, lemon juice and 1 1/2 tablespoons sugar in a bowl and stir.

Remove the pear slices and arrange them in a pan, cover with aluminum foil and bake for 10 minutes. Add the apples, cover again with foil and bake for another 30 minutes.

Mash the baked fruits with a fork and after they cool, add the blueberries to them.

Mix the two types of flour, add the brown sugar and butter and rub with your fingers to get crumbs. Transfer to a pan covered with greaseproof paper and bake for 15 minutes. Remove from the oven and allow to cool.

Add the remaining 3 tablespoons of sugar and nuts to the casserole and mix. Wait for them to caramelize for about 5-6 minutes. Transfer to a pan and scatter the nuts away from each other to cool without sticking. When cool, grind them in a blender or coffee grinder briefly.

To prepare the cream, mix all the products together, except for the cream, which you add at the end.

Assemble the dessert by placing some of the crumbs on the bottom, add some of the fruit on top, followed by some of the cream and nuts. Sprinkle with more crumbs and put a little cream, then finish with some of the nuts.

It is best to refrigerate for a few hours before serving, in which case put the nuts on top at the last minute.
