Necessary products:

400 ml cream (33% fat)

3 eggs (yolks only)

30 grams of white crystal sugar

10 grams of vanilla sugar

1 tbsp brown sugar

Method of preparation:

Mix the cream with the vanilla sugar and place on the hob. Just before boiling, remove from the heat (do not allow to boil) and leave for 5 minutes to cool slightly. Mix the yolks with the sugar and mix gently with a wire whisk, but do not beat. Add 1/2 cup of hot cream to the eggs and stir until the sugar dissolves. Add (thin stream) and the remaining cream, stirring constantly. When preparing the cream, it is very important to stir, not to break, so as not to form bubbles. If they do appear, remove them with a spoon or crack them with a toothpick.

Divide the mixture into molds and place them in a tray with water (the water should be in the middle of the cups / bowls). Put in the oven at 180 degrees for 25 minutes. Then cool to room temperature and refrigerate for 3 hours.

It's time for the caramel crust. Sprinkle the cream with the brown sugar and bake for 5 minutes at maximum temperature on the "grill" function. Make sure that the sugar does not burn, you should get a golden crust.

Cool (in the fridge) and serve!
