How To Cook Crispy Bacon With Potato Bread And Mascarpone - Recipe

There is no denying that every dish to which bacon is added becomes unique. It is crunchy, rich in flavors and we always want more and more from it. And the tender potato bread is perfectly complemented with crispy meat and melting mascarpone cream.

Required products :

  • 500 grams of potatoes, peeled and sliced
  • 50 grams of butter
  • 1/2 teaspoon flour
  • 1/2 teaspoon baking powder
  • 2 tablespoons finely chopped chives
  • 1/4 teaspoon parsley, finely chopped
  • 2 tablespoons olive oil
  • 200 grams of bacon, cut into thin slices
  • 2 tablespoons mascarpone
  • 2 tablespoons maple syrup
  • grated manchego cheese (or yellow cheese)

Method of preparation :

Boil the potatoes in well-salted water (do not worry that they will become salty, they will absorb as much as needed). Drain the potato slices and return them to the hot dish on the hob to dry for 5 minutes, but do not let them cool.

Add the butter to the warm potatoes and mash. Then add the flour, baking powder, 1 teaspoon of salt and spices of your choice. If the mixture seems very moist, add a little more flour. Transfer the dough to a plate and mix to obtain a ball.

Divide it into 2 equal parts. Cool completely, then roll into 2 circles with a diameter of about 15 centimeters. Cut into 4 triangles (like pizza).

Heat olive oil in a pan (if possible, use one with a fireproof handle) and fry the potato cakes for 3-4 minutes on each side, until golden.

Fry the bacon until crispy.

Turn on the oven on the upper rack.

Prepare two portions, putting half of the loaves in the pan for each, put a spoonful of mascarpone on top and pour a little syrup. Bake for 1-2 minutes until the cheese is melted. Serve with bacon and grated manchego cheese (parmesan or yellow cheese).
