Boil the potatoes (over medium heat in salted water), first peeling them and cut into small pieces.
Cut the mushrooms and fry together with the onions until transparent in a small amount of oil. Stir in the meantime. Season them, remove the pan from the heat and leave to cool (if you choose, you can also add chopped green spices).
Once the potatoes are ready, mash them, draining the water first. Add a little oil to make it easier to shape the bites. Optionally season to taste.
Spread some of the puree on your palm. Put the stuffing in the middle and close it with the potatoes, forming balls.
Beat the egg with a pinch of salt, dip the croquettes in it, roll them in breadcrumbs and fry until golden in hot vegetable oil.
When you take out the finished ones, arrange them on paper to drain off the excess oil.
