Baked potatoes with butter, spinach, capers and lemon are a fragrant and very tasty appetizer or side dish. They have a nice soft texture and in combination with grilled meat you will get a full lunch or dinner.

Required products :

  • 500 grams of medium-sized potatoes, peeled and cut in half
  • 1 tablespoon olive oil
  • 2 tablespoons butter
  • 100 grams of spinach
  • 2 tablespoons capers, drained
  • juice and peel of 1/2 lemon
  • salt and pepper to taste

Method of preparation :

Put the potatoes in a large saucepan with cold salted water. After boiling, reduce the temperature and simmer for 15 minutes or until soft. Drain and set aside.

Heat olive oil with 1 tablespoon of butter and fry the potatoes in the fat, without stirring, for about 5 minutes or until golden. Pour the remaining oil with the spinach, capers, lemon zest and juice. Stir for a few minutes until the spinach is soft. Season with salt and pepper and serve.
