Required products :

2 1/2 teaspoons flour (you can combine 1.5 cups of whole wheat and 1 cup of high quality wheat)
200 milliliters of cold water (put in the refrigerator in advance or add ice cubes)
100 milliliters of vegetable oil (you can also use less)
incomplete tablespoon salt
incomplete tablespoon soda
1/3 teaspoon citric acid

Spices and seeds:

1 tablespoon basil
1/2 tablespoon cumin seeds
1/2 tablespoon coriander
1 tablespoon paprika
2 tablespoons sesame seeds (white, black or mixed)
2 tablespoons flaxseed

Method of preparation :

Add soda, salt and citric acid to the flour. Stir.
Pour the oil into the cold water and beat until white foam is obtained.

Mix with the flour.

Stir and knead a soft dough. It is very gentle and elastic. Cover the dish with a lid or close with a plate and let the dough rest for 10 minutes.

In a suitable bowl, mix all the spices and seeds.

Put 1 tablespoon of the aromatic mix on baking paper.

Tear off half of the dough, shape it into a ball and roll in the spices and seeds.

Flatten and roll, adding more of the mixture and pressing with a rolling pin so that the seeds and grains enter the dough.

Then cut into pieces, the shape and size are of your choice. Proceed in the same way with the rest of the dough.

Bake the crackers in the oven at 180 degrees for about 20 minutes.

You can serve the crunchy cookies with a suitable favorite sauce, for example: avocado guacamole, basil pesto or tomato sauce with ginger.

Enjoy your meal!
